Beast Sphinx Semillon 2009
The Beast label is a creation of Nina and Caleb at Buty Winery (but if I put Buty in the title you would have Buty Beast Sphinx Semillon and you might get confused) But there is no confusion about what is in the bottle. It a delicious example of one of Washington’s best, but under appreciated, white grapes, it is also a wine that is priced for the times. It’s clean, fresh fruit and lack of wood makes it ideal for a wide range of local fish. With halibut on the market right now I would highly recommend a visit to one of the Market’s fish mongers then a visit to Pike and Western to pick up a bottle of this.
